
We’ve been purchasing bagels each week during our grocery shopping for my adorable boyfriend to eat for breakfast or lunch. When thinking about what to make this week, I figured I could eliminate that purchase and try to make my own. And what a good idea that was. I was a little intimidated by the boiling and then the baking because it just seemed weird, but hey, what’s the worst that can happen?

The recipe I used it from the Brown Eyed Baker and you can print it from there. It is a variation on Peter Reinhart’s basic recipe. You begin the day before by combining flour, yeast and water and allowing it to rise, then adding more flour and yeast, as well as 8 egg yolks, salt and brown sugar. This mixture is then kneaded for 10 minutes (if you’re doing it by hand) and allowed to rest for 20 minutes. You shape the dough (which was totally fun), allow it to rest a further 20 minutes and put them in the fridge over night.

The next day, the real fun begins. I boiled by bagels for 2 minutes on each side to make them extra chewy. Then you bake them in a very hot oven and then you’re done! As you can see, my bagels are huge and I managed to only destroy one, so go me. These are very, very tasty, and well worth the time to make them. I’d like to try some different variations and also see if there’s a good whole wheat recipe out there. Any suggestions?
