
I am half Swedish — half in the sense that my maternal grandparents were very, very Swedish and my mother is a full-blooded Swede. However, not in the sense that I know more than 3 words in the language (fun fact: there is no word for “you’re welcome” in Swedish, so people just say “thank you” constantly) or can cook like, anything Swedish. Also, I dislike smoked fish. It just seems wrong.

So, along with my blond-ish hair and blue eyes, I did grow up with Swedish pancakes and Swedish meatballs made by my mother for special occasions. Very delicious occasions, though I have not made those specialties myself. This week’s recipe for Swedish Visiting Cake made me feel a sense of obligation for the recipe and my heritage — plus it’s super easy.
This cake uses pantry staples — eggs, sugar, flour, extracts, lemon — to make a moist, delicious cake, perfect for afternoon entertaining. It also used all of ONE BOWL which was just glorious. I made a half recipe in a cupcake tin and ended up with 6 cupcakes. I also omitted the blanched almond topping since I didn’t have any and topped them with a lemon glaze (recipe below). This is a great recipe for when you need something quick and tasty, and not too heavy. Win!

Lemon Glaze
INGREDIENTS
- 1 cup confectioners’ sugar, sifted
- 2 tablespoons lemon juice
- Zest of 1 lemon
METHOD
- Place confectioners’ sugar in a bowl, whisk in zest
- Whisk in lemon juice
- Spread over cake(s) — this will drip over the sides

Wow, no word for you’re welcome? That’s insane! I can hear people thanking each other over and over again in my horrible copy-cat Swedish accent. But I guess that’s no different than Hawaiians. They use Aloha for hello and goodbye. Which I bet can get pretty funny
