Tuesdays with Dorie: Chockablock Cookies

Alas, my Tuesdays with Dorie friends, I missed last week due to a couple of issues:

So!  Forgive me my lapse — and I made these delicious chockablock cookies and loved em.   Which was a bit unfortunate since after a week at a luxurious resort I was kind of hoping to not eat any?  Because I’ve been drinking a lot of cocktails?  Alas, it was not to be, as these are really, really good.

I have to say, I was less than enthused about making these since they are made with a mixture of shortening and butter I don’t particularly like to bake with shortening because, well, I don’t really understand what it is.  Also, I tend to like my cookies more on the chocolate side of things and these are a moist, slightly molasses flavored cookie with all kinds of bits of dried fruits and nuts in them.  They come together quickly so it wasn’t too much work — I made a half batch and ended up with 28 cookies or so.   I used some leftover dried cranberries, cherries, pecans, and white chocolate chips for my add ins.

  3. I used all butter, these were delicious. Hubby said they are his new favorite cookie.
